It's a Jungle out there..!!!! the jungle is a marvelous yet dangerous place. filled with dangerous beautiful creatures, healing plants and trees, nutrious fruit and pristine waters, the jungle can be a skin care heaven. So today i will discuss some of the many wonderful things that can found in the jungle for you skin and health.

When you see local people who live in the jungle, you will notice that they have such wonderful skin.There are many factors that contribute to prett skin in the jungle, the rain, clean air, humdity, the lush (yet dangerous) waters, but most important is the Diet. The food we eat ultmately effect how are skin looks.In tropical settings diets high in fruits, veggies and protein are the key ingrident to have lush, beautiful, exotic skin. So what are some of the fruits and veggies that come out of the jungle..? well
, coconuts, figs, oranges, lemons, grapefruit, bananas, guavas, pineapples, mangos and tomatoes; vegetables including corn, potatoes, rice, winter squash and yams; spices like black pepper, cayenne, chocolate, cinnamon, cloves, ginger, sugar cane, tumeric, coffee and vanilla and nuts including Brazil nuts and cashews.

now let's look at a few jungle friendly dishes!!!
Curry mango Chicken
INGREDIENTS (Nutrition)
Chicken:
3 1/2 tablespoons curry powder
2 teaspoons minced ginger
2 cloves garlic, minced
1 pinch crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon thyme
10 skinless chicken thighs

Rice:
2 cups converted long-grain white rice, rinsed
2 cups mango - peeled, seeded and chopped
1 onion, chopped
2 cloves crushed garlic
2 teaspoons minced fresh ginger root
1 tablespoon curry powder
1 pinch red pepper flakes
1 teaspoon salt
1/4 teaspoon thyme
10 whole allspice berries
3 tablespoons brown sugar
1 cup water
2 cups chicken broth
2 tablespoons lime juice
1/2 (14 ounce) can coconut milk



DIRECTIONS
In a large bowl, stir together the curry, ginger, garlic, red pepper flakes, salt, pepper, and thyme. Place the chicken in the bowl, and coat evenly with seasoning. Cover, and marinate for 2 hours or more.
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, stir together rice, mango, onion, garlic, and ginger. Season with curry, red pepper flakes, salt, thyme, allspice berries, and brown sugar. Stir in water, broth, and lime juice. Pour into a casserole dish, and arrange the marinated chicken on top. Then pour coconut milk over the top. Cover with aluminum foil.
Bake in preheated oven for 1 hour. Remove foil, and cook 10 to 15 minutes more. Remove allspice berries before serving.



Mango Salsa



Fresh mango salsa is easy to make and perfect with halibut or salmon or as the salsa in fish tacos.

Ingredients
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) 1/2 medium red onion, finely chopped1 Jalapeño chile, minced (include ribs and seeds for a hotter taste if desired)1 small cucumber, peeled and diced (about 1 cup)3 Tbsp fresh cilantro leaves, chopped3 Tbsp fresh lime juiceSalt and pepper to taste
Also good with diced red bell pepper and jicama.
Method
Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
